Citrus Blossom Honey-Glazed Pork Loin 1/2 cup Branches Citrus Blossom Honey 1 Shallot, sliced 1 boneless Pork Loin Roast (about 3 pounds, tied) 1/2 cup Riesling Wine 3 springs fresh Thyme 2 Garlic Cloves, smashed 2 Cinnamon Sticks 3 Tbs Oakville's "Our House" Olive Oil Salt + Pepper
In a small saucepan over medium heat, combine the honey, wine, garlic, shallot, thyme and cinnamon sticks. Cook, stirring, for 15 minutes. Remove the pan form the heat and let the mixture steep at room temperature for 20 minutes to let the flavors develop. Pour the glaze through a fine mesh strainer into a bowl; reserve. Preheat the oven to 350°F. Liberally season the pork with the salt and pepper. In a large sauté pan over medium-high heat, heat the oil. Add the pork to the pan and cook, turning, until evenly browned on all sides, about 5 minutes. Transfer the pork to a roasting pan fitted with a rack. Brush the honey over the pork loin. Roast until the pork reaches an internal temperature of 150°F, about 45 minutes. Remove from the oven and transfer to a cutting board. Cover loosely with aluminum foil and let rest for 10 minutes before carving. Snip the strings and cut the pork into slices 1/2 inch thick. Arrange on a platter and serve with the Oakville Grocery Apricot Ginger Mustard alongside. (Serves 4 - 6) |
